Day 3: Crockpot Fiesta Chicken

A couple of months ago, I went through a heavy crockpot phase and tried a bunch of different recipes.  Based on that whirlwind of cooking, I tweaked a chicken recipe (I don’t remember where the original came from at this point), and it’s become a family staple.  Sooo good and super fast and easy to make.

  • Package of boneless skinless chicken thighs (I like organic ones)
  • Package of frozen corn, black bean and pepper mix
  • Fresh salsa (I like mild spice)
  • 4 oz cream cheese (fat free, low fat or regular all work fine)

Put all the ingredients except the cream cheese in the crockpot and cook on low for five hours.  Add the cream cheese for the last 30-45 minutes.  Stir and serve.  Super tasty.
